In my opinion this is a very bad idea. The mixing of genders during washroom visits is/will be quite unsettling for many.
What I will suggest is a compromise. Let there be gender specific washrooms and gender neutral washrooms. See which rooms get the most use and least complaints and respond accordingly.
Further, for the neutral washrooms I suggest an adult monitor be present during all open hours.
